Temperature, the variable nobody measures
Every serving range is below the temperature of a heated room, which is what twenty minutes in the fridge is for.

Temperature changes how much of a drink reaches your nose, how sweet it seems, and how hard the tannin feels. It is the easiest of the three variables to fix and the one almost nobody measures.
What warmth does
Alcohol becomes more volatile as it warms, so it leaves the surface of the wine faster and arrives at your nose ahead of everything else. A red served at the temperature of a heated room smells of spirit first and of fruit second, and tastes broader and less defined than it should.
Sweetness is also perceived more strongly when warm, and acidity less so, so a wine served too warm seems both sweeter and flabbier at the same time.
What cold does
Cold suppresses the release of aromatic compounds, so an over-chilled wine smells of very little. It also increases the perception of bitterness and astringency, so tannin feels harder than it is, and reduces the perception of sweetness.
Which is why a cheap white is often served very cold: chilling hides what is there. Applied to a wine worth smelling, it hides that too.
Where things want to be
Roughly: sparkling six to eight degrees, light whites eight to ten, fuller whites ten to thirteen, light reds twelve to fourteen, full reds fifteen to eighteen.
Every one of those is below the temperature of a heated room, which is usually twenty to twenty-two. Room temperature as a serving instruction dates from rooms that were considerably colder than yours.
The twenty-minute fix
Twenty minutes in a fridge takes a red from a heated room to somewhere near the top of its range. Ten minutes takes the edge off a white that has been standing out.
Going the other way is harder and rarer: a bottle straight from a cold fridge needs half an hour in the room, and warming it in your hands works on the glass rather than the bottle.
Chocolate has its own range
Cocoa butter melts a little below body temperature, which is the whole reason chocolate behaves as it does in the mouth. Properly tempered, it is solid in your hand and liquid on your tongue, and that transition is where the flavour is released.
Below about sixteen degrees the fat is firm enough that the flavour arrives late and thin. Above about twenty-two it begins to soften before you eat it and the texture takes over from the taste. A cool bar held in the hand for a minute is in range.
The glass matters less than you are told
Shape affects how much surface area is exposed and how the aroma is concentrated, and the effect is real and modest. Temperature has a larger effect than shape, and it costs nothing.
Holding a glass by the bowl warms it measurably over a few minutes, which is the actual reason for the stem, and the one piece of glassware etiquette that has a mechanism behind it.
At an indoor tasting in February
The room is heated, the lights are on, and there are several hundred people in it. Everything on the tables drifts upwards through the evening.
If a red tastes hot and broad, it probably is. Ask whether there is a cooler bottle open, or come back to that table later, and notice how different the same wine is an hour apart. It is the cheapest lesson available on the floor.
Measuring it, if you want to
A cheap probe thermometer settles every argument in this entry in about four seconds, and almost nobody owns one. Failing that, a bottle that feels cool against the inside of your wrist is roughly in range for a red, and one that feels neutral is too warm.
The hand is a poor instrument and it is better than the assumption that room temperature means anything fixed.
The ice bucket, used properly
Water and ice together, not ice alone. Ice on its own touches the bottle at a few points and chills it slowly; water fills the gaps and carries heat away many times faster.
Ten minutes in water and ice does what half an hour of ice alone does, and it is the single most common mistake made with a bucket.
Where to keep the chocolate meanwhile
Not the fridge, which is both too cold for serving and humid enough to cause the pale surface described in the entry on storage. A cupboard away from the cooker, between about fifteen and eighteen degrees, is right, and a bar taken from there is a few minutes of hand-warmth from its range.
Getting both right at once
The awkward part of this pairing is that wine wants to be cooler than the room and chocolate wants to be near it. Serving both from the same place gets one of them wrong.
At home, the bottle comes out of the fridge when the chocolate comes out of the cupboard, and by the time you have opened one the other is ready.
Sparkling is the exception that proves it
Bubbles carry aroma upward, so a sparkling wine releases more of itself at a low temperature than a still wine does. That is why the serving range is colder without the wine going mute, and why a warm sparkling wine is so unpleasant: the same mechanism running too fast.
